A light coconut flavoured sponge encases a chunk of refreshing pineapple to give an overall flavour which is sure to remind you of fun days spent in the sun! The topping is a creamy coconut flavoured butter-icing which is then decorated with desiccated coconut for the perfect finish.

Sponge Ingredients: Plain Flour, Caster Sugar, Baking Powder, Salt, Unsalted Butter, Tinned Pineapple, Free Range Eggs, Coconut Milk, Vanilla Essence.        
Topping Ingredients: Icing Sugar, Unsalted Butter, Coconut Milk, Desiccated coconut to decorate.
